Crispy chicken wings is a firm favorite at our house. Each one of use has their own favorite recipes when it come to chicken wings, I like mine in spicy curry sauce, Marisa likes her in garlic and chilli, Emj and Mr M prefer it in a lightly coated batter.  

In April was Thai New Year and I was went into Emj’s school to tell the children about Thailand. I decided to take in some Thai food with me. I took in all kinds of wonderful delicious things although the children might disagree with me on that. Even though they did not like all the food I took in they were willing to try them all, which I think was amazing. This is very important to me when it comes to children and food. It is ok if they do not like it as long as they have given it a go and try it. I get really upset if children just take a look at the food and says “No” That was how I was like as a child and I think I have missed out a lot. 

One thing all the children did love was my crispy chicken wings and I have had a few parents asking me for the recipe as the children has come home asking them to cook it. You have no idea how happy that has made me.

This crispy chicken wings recipe is one of the simplest recipe. I guess it is our version of chicken nuggets as it is not the best thing to eat all the time as it is deep fry but once it a while we can be naughty.  It is also a great beer snack for the grow up. 

The recipe is base on 12 chicken wings as that is now many comes in a pack in most supermarket. 12 wings means 12 full wings, you will need to cut it into portion. We normally cut into 3 pieces – the small drumstick, the wing part and the little wing end. Most people do not use the little wings end but we love it in our family. It is up to you if you will use this part or not.

Ingredients
  • 12 chicken wings Cut in to parts
  • 5 tbsp fish sauce
  • 1 tsp Garlic Powder
  • 5 tbs plain flour
  • 2 tbs water
  • pinch white pepper
  • 1 ltr vegetable oil for frying

  • 12 chicken wings Cut in to parts
  • 5 tbsp fish sauce
  • 1 tsp Garlic Powder
  • 5 tbs plain flour
  • 2 tbs water
  • pinch white pepper
  • 1 ltr vegetable oil for frying

Instructions
  1. Marinate the chicken wings in the fish sauce,garlic powder, white pepper for about half an hour.
  2. Heat up the oil to medium heat in a saucepan large enough to fit the chicken wings in and it will not overflow. I like using my wok for this.
  3. Add in the flour and water to the wings and give it a good mix. It should just coat the wings lightly. Add more flour or water to adjust as require.
  4. Slowly place the wings into the hot oil (please take care) cook until wings are golden. Turn the heat up towards the end so that your wings can get really crispy and it will also ensure that it is not greasy.
  5. Drain on kitchen roll and serve.
