This Crispy tofu salad is so good, Mr M requested it on Father’s day. In case you do not know he hates salads. Not that he does not like vegetable he just does not like leaf. So, I was very surprised when I asked him what he would like for his Father’s day lunch? The one day that he could have ask for anything and I would have made it for him he asked for a salad. Not one that have steaks on it as well but one with tofu!! . “It’s the dressing” he said, “the dressing and the herbs is really nice”.

This salad dressing was a bit of an accident that turns out to be the best thing ever. It has orange juice in it because I ran out of lime! It has sweet chilli in it because I did not have enough honey. It is base from Yum Sauce which is a very popular Thai salad dressing. This dressing however is milder and fresher perfect for summer.

For this recipe I am serving it with young leaves salad any ready made from the shops or one you put together at home will do. There is no rules to it, just use your favorite young leaves. You will need to add to it coriander leaves, mint leaves, and Thai basil (sorry not westren). I used deep-fried crispy sheet tofu (because I love them)  you can use soft tofu if you can not find these, just drain them and dried them well on kitchen roll, cut them into small cubes and fried them till crispy. Normal bread crouton would be just as nice too.

For the dressing
  • 3 tbsp fresh lime juice About 2 limes
  • 2 tbsp Fresh orange juice About 1 orange
  • 1 clove garlic - peeled
  • 1 pinch coriander
  • 2 small chilli
  • 2 tbs sweet chilli sauce
  • 1 tbs Honey
  • 2 tbs olive oil
For the salad
  • 1 bag young baby leaves salad
  • 1 pinch coriander leaves
  • 10 leaves fresh mint
  • 10 leaves Thai basil
  • g Tofu sheets or fried soft tofu

Instructions
  1. in a small food processor or blender, crush the garlic, chilli and coriander.
  2. add in the orange juice, lime juice, sweet chilli and honey and give it another quick blend
  3. add in olive oil and a final mixed, teste and adjust as require.
  4. torn the coriander leaves, mint leaves and Thai basil and add it to a bag of ready made baby salad leaves. arrange on serving dish
  5. fried the tofu in vegetable oil till crispy, drain on kitchen paper and leave to cool before adding to the salad.
  6. serve the salad with the dressing on the side.
